How To Make an Easy Vegan Meal: Chickpea Sandwich
I recently started a series of videos to help provide inspiration for easy, quick, low-cost meals. This is one of my favorites! It’s Terrence’s Chickpea Salad, using fresh onion and garlic instead of powders. If you don’t have the fresh onion and garlic, the powders are equally delicious in this recipe. What I like best about this dish is that you can omit ingredients you don’t have on-hand and it’ll still taste great. Don’t have a bell pepper? Don’t have a pickle? No problem … skip ’em! The chickpea salad is about .50-.70 per serving, and I used two slices from a .99 loaf of bread I purchased from WinCo.
