Apple Pie Burritos

I have a huge sweet tooth, which should come as no surprise if you take a look at my recipes.  There also have been times when I have really been down on my luck and could hardly justify spending money on anything sweet.  So during those times, these became my best friend.  For a couple bucks, I could fill my place with a whole bunch of these.

They are super quick, really easy, fun to make with the little ones in your life and satisfy the biggest sweet tooth.

Ingredients

  • 2 Apples (I prefer tart, so I use granny smiths)
  • 1 Tablespoon Sugar
  • 1 Teaspoon Flour
  • 1/2 Teaspoon Cinnamon
  • 1/8 Teaspoon Salt
  • Tortillas

Method

Step 1

Peel then chop the apples into small bite sized pieces.

Step 2

Combine the apples and all the dry ingredients into a bowl and mix. Let sit for 5-10 minutes to get the juice saturated throughout.

Step 3

Use your stoptop burner or microwave to get the tortillas nice and hot, then spoon in some filling and roll up like a burrito. Serve hot!

    I made the recipe above (minus the flour) and cooked it in the oven so it would be more pie-like. Basically, preheat the oven to 350. Slice your apple very thinly, add spices and fill your tortilla as full as you can. Now smear a small amount of margarine around the outside of the burrito (or olive oil if you prefer) so it’ll get crispy in the oven. I use a cast iron skillet, which always seems make food taste better somehow. Cook 15 minutes. Raise temperature to 370-400 and cook another 10-15. Flip sometime in the last 10 minutes so it’ll make both sides equally crispy. It’s excellent.
