Arugala Pesto Couscous2015-02-09
This is a really easy dish and depending what you add in, it can be the main dish. I like to just add tomatoes and sometimes kale. You can also sub the couscous for your grain of choice. It’s pretty good in Bulgar.
- 8oz Israeli Couscous (or any grain)
- 6 cloves garlic
- 1/2 cup walnuts
- 3/4 teaspoon salt
- 1/2 cup parsley leaves
- 3 cups arugula
- 3/4 cup - 1 cup extra virgin olive oil
- 3 large tomatoes chopped
Cook your grains. Make pesto while it cooks.
In a food processor or blender process garlic, then add walnuts.
Once nuts are broken down add salt, parsley, and arugula, and add oil slowly, scraping down the sides as needed.
Add pesto to grains to taste and toss, add tomatoes. You'll have left over pesto. Make some pasta tomorrow!
