BBQ Tofu Sandwich with Spicy Coleslaw2013-01-14

This is a fun sandwich to make because you can play with the taste. If you want it sweeter, use a sweet BBQ sauce. If you want it more spicy, add more hot sauce. The coleslaw gives the sandwich a spicy crunch and the pickle mixes great with the heat. Enjoy!

- 1 Block of Extra Firm Tofu, pressed
- 1/2 Cup of BBQ Sauce
- 2 Teaspoons of Hot Sauce
- 1/4 Cup of Water
- 3 Cups of Shredded Cabbage (I use the mixed coleslaw bags)
- 1 Green Apple, diced
- 2 Teaspoons of Apple Cider Vinegar
- 2 Teaspoon of Brown Sugar
- 1 Tablespoon of Cajun Seasoning
- Enough Bread for 4 Sandwiches
- 4 Pickle Slices
Preheat oven to 425f.
Mix BBQ sauce, hot sauce, and water in a bowl.
Place tofu in an 8x8 baking dish. Cover tofu with BBQ sauce mix.
Bake for 25 minutes, flipping every 8 - 10 minutes.
While tofu is cooking, place cabbage, apple, sugar, vinegar, and Cajun seasoning in a bowl and mix.
Remove tofu from oven and place on bread. Top with coleslaw and a pickle slice.
