Breakfast Burritos

These burritos are my go to  breakfast almost every Saturday.  They are really tasty, and I hope you enjoy them as much as me!

Ingredients

  • 1 Pack of Extra Firm Tofu, water pressed out
  • 1 Cup of Chopped Kale
  • 1/2 Cup of Diced Onion
  • 2 Tablespoons of Nutritional Yeast
  • 1 Tablespoon of Chili Powder
  • 1 Teaspoon of Garlic Powder
  • 1/2 Teaspoon of Tumeric
  • 4 Burrito Size Tortillas
  • Salsa
  • Avocado (optional)

Method

Step 1

Place tofu in a large bowl and crumble with a fork.

Step 2

Add nutritional yeast, chili powder, garlic powder, and turmeric to bowl with tofu and mix in.

Step 3

In a non stick pan or pan coated with cooking spray, heat onion for 3 minutes.

Step 4

Add tofu to pan.

Step 5

Cook tofu for 5 minutes.

Step 6

Add chopped kale to pan and continue to cook for 5 more minutes.

Step 7

Place tofu mix into burritos. Top with salsa and avocado.

Step 8

Roll them up, and enjoy!

    WONDERFUL! We had to use corn tortillas because that’s all we had. And we used spinach instead of kale because we didn’t have any and it was amazing!!! We HATE tofu, but LOVED it in this! We also halved the recipe because there were only 2 of us!

    My tofu was frozen so I defrosted it, squeezed out all of the water.It looked like ground meat tasted after it was cooked. DELCIOUS! I didn’t have kale on hand either, but I had lots of arugula from my garden, so I used that. I also added 1/2 cup of black beans and the avocado. OMG! I ate TWO of them! Thanks!
