Chow Mein

This is my version of chow mein. I used the produce that I had on hand,  but usually I like to toss in some baby bok choy and some broccoli. Also, to lower the sodium content, I try to use low-sodium bullion and soy sauce.

Ingredients

  • package of wheat noodles
  • 1 bullion cube in 1 cup water
  • 3 stalks celery, julienne cut
  • 2 carrots, grated
  • 1/8 cup low sodium soy sauce
  • 2 cloves garlic, minced
  • 1/2 yellow onion, diced
  • 1 tbs peanut oil
  • 1/2 bag of bean sprouts

Method

Step 1

Boil noodles - follow instructions on the package you choose. Drain and set aside.

Step 2

In a large pan or wok, sautee onion, garlic, celery and carrots in peanut oil.

Step 3

Add broth and soy sauce, bring to a boil and turn down heat and let simmer for five minutes. Add noodles and bean sprouts, mix thoroughly. Let sit for a couple minutes and enjoy!

    I make something similar to this, but I call it Lo Mein. It’s the same idea, but for the sauce, you mix up a little hoisen sauce with soy sauce, brown sugar, chili oil, sweet rice vinegar & a little water. when you add the noodles to vegetables, then you add the sauce and it all gets coated, then you let it cook for a minute or two to thicken. i don’t use measurements, i just do a little of this and a little of that to taste.
