Creamy Sweet Potato Spaghetti2015-03-30
Only a few ingredients to make this yummy, thick, creamy sauce for your favorite noodles. Makes enough sauce for one package of spaghetti. But you can use it for other things, like in tacos or as a dipping sauce for spring rolls!
- 2 lbs sweet potatoes
- 5ish fatty garlic cloves, roughly chopped
- 3/4 cup coconut milk
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- pepper to taste
- 3 handfuls of chopped kale
Cook spaghetti according to package and about 30 seconds before you drain it, add the kale to allow it to wilt. Set aside
Chop sweet potatoes (the smaller the chop the faster it will cook) put in a pot with a lid and enough water or broth to cover a little more than half the potatoes. Add in the garlic
Once they are soft, remove from heat and add coconut milk, paprika, salt, and pepper, and blend until smooth. If it's too thick for your taste add some broth or water.
Add sauce to cook spaghetti right before eating. If you mix it all in the pasta will absorb the sauce. Store extra sauce separatly from pasta.
