What Goes Into This Smoothie

This green smoothie with strawberry is made using simple, healthy, whole ingredients.

  • Strawberries: Frozen is best. They’re convenient, often less expensive, and give the kale berry smoothie a slightly frozen consistency.
  • Banana: Use fresh or frozen. You can even freeze overripe bananas and use them in smoothies. It’s a great way to save some money by reducing waste.
  • Pumpkin seeds: Healthy fats, fiber, and other nutrients but sunflower seeds work too.
  • Flax seeds (or flax meal): Ground flax seeds are a healthy source of omega-3 fatty acids. You can also use chia seeds or hemp seeds.
  • Kale leaves: Healthy greens boost the nutrition in this vegan smoothie. You can also use spinach or other greens.
  • Dates: A source of natural sugar to lightly sweeten this kale and fruit smoothie.
  • Water or plant-based milk: To help blend up the fruit and vegetables creating a smoothie texture. If using plant milk, my favorites are almond milk or coconut milk.

  • 1) Add all the strawberry green smoothie ingredients to a blender.
  • 2) Blend until smooth and creamy, adding water or milk as necessary to get desired smoothie consistency.

  • Shake consistency: For a thick and creamy shake-like smoothie use frozen strawberries and bananas.
  • Meal prep: For easier mornings, pack up the fruit, seeds, and kale into containers. Then when you’re ready to make it, dump everything in the blender and add dates and liquid to blend.

Is raw kale in smoothies good for you? 

Yes, kale is a superfood nutrient and contains generous amounts of fiber, vitamins A, K, B6, and C, calcium, potassium, copper, and manganese while also being low in calories. The vitamin K in kale may be a problem for anyone taking blood thinners so be sure to check with your doctor if this is a concern.

Can you blend kale stems in smoothies?

No, I don’t recommend using the stems, especially the larger ends. These can be quite fibrous and may not blend up super well in the smoothie. You are better off reserving the ends to use in soups or stews where they are cooked for a long time to soften up more.

Is it ok to drink a green smoothie every day?

Sure, there’s nothing really unhealthy about having a green smoothie every day. Just be sure to watch the sugar content and serving size so you don’t overdo it.  You might also want to vary up the ingredients a bit so you are getting a bit more variety in the nutrients you are getting.

Variations

Here are a few choices for ways to add a little variety to your smoothie.

  • Protein boost: Add in a scoop of your favorite vegan protein powder or a tablespoon of peanut butter or almond butter.
  • Creamier: Add silken tofu or vegan yogurt to make a creamier consistency.
