Kale Salad with Lemon Tahini Dressing

Total Cost (minus sundries): I wish I could put how much I spent buying what I needed as opposed to how much it would cost to actually make this. I already had everything I needed with a couple of exceptions, that cost me 24 cents. That being said, in total, this will cost about $5 for a few salads.
As I’m sure you know, kale has been deemed the best food ever. It doesn’t earn the title ‘super food’ for nuthin’. It’s nutritional content is through the roof, and it tastes good to boot. I try to eat it as much as possible and my body thanks me for it.
This is a super easy salad with kale as the base. I’m not going to tell you what to put in your salad, you’re an adult, but I like to keep it simple. Some nice additions however would be cherry tomatos, dried cranberries, carrots and/or cucumber. And the tahini dressing? So good. Let’s do this:
Ingredients
- 1 bunch of kale, chopped
- 1/4 cup tahini
- 1/4 cup lemon juice (about 2 small lemons)
- 1 teaspoon soy sauce
- 2 tablespoons water
- 1 tablespoon lemon zest
- 2 cloves of garlic, diced
- 1/4 cup cashews
Method
Step 1
Rinse, and chop kale, putting it into a bowl. Add any extra salad fixin's.
Step 2
Combine all the other ingredients into a jar or bowl and mix. Use an immersion blender, a food processor or a fork and some elbow grease. Mix until it reaches a consistency you like, which may include adding more water.
Step 3
Top the salad with the dressing, and really stir it into the kale. Let sit for 5 - 10 minutes before serving to allow the dressing to soak in. Top with cashews.

Love this. I have made this three times now, and added nutritional yeast and avocado (and quinoa, on one occasion.) My favorite part is that the kale doesn’t get soggy and keeps perfectly for lunch at work the next day.
