This was a quick lunch I put together yesterday. I had a bunch of odds and ends in the fridge and didn’t want them to go to waste. I used the Sorta Spicy Peanut Sauce and was very pleased with the outcome.
Estimated Cost Per Serving: $1.42 (not including peanut sauce)
- 3 Cups of Chopped Kale
- 1 Cup of Chopped Mushrooms
- 1 Green Bell Pepper, sliced
- 1/4 Cup of Diced Onion
- 1/4 Cup of Sorta Spicy Peanut Sauce
Prepare Sorta Spicy Peanut Sauce.
Add diced onion to non stick, or pan coated with cooking spray.
When onion starts to soften, add green bell peppers. Cook for 5 minutes.
Add mushrooms, kale, and peanut sauce to pan.
Continue to cook until kale and mushrooms have softened.
Serve over rice or by itself. Enjoy!
