Pistachio Hummus

Hummus- the perfect food for any occasion! Hummus is one of those dishes/recipes that are so fun to make. You can swap around ingredients and spices and have an endless world of flavors and textures. This recipe is my pistachio hummus. The pistachio flavor is mild at first- but really comes through the next day. If you plan on making this for a party, let it sit for a day!

 

Ingredients

  • ¾ cup pistachios (roasted/salted)
  • 2 cans garbanzo beans (reserve water)
  • ¼ cup olive oil
  • 1 tbs cumin
  • 2 tbs tahini (or more to taste)
  • ½ lemon juiced
  • 3 garlic cloves
  • 1 tbs parsley (for garnish)

Method

Step 1

In the bowl of a food processor, add the pistachios, reserved garbanzo bean water and oil. Wiz on high for 1 minute.

Step 2

Add the remaining ingredients, wiz for 1-2 minutes, scraping down the sides occasionally (omit the parsley)

Step 3

Chop the parsley and sprinkle on top of the hummus. Add a few pistachio pieces for a textural difference
