June 30th is National Vegan Pizza Day! Since pizza is high on my ‘favorite food’ list, I thought I would make these super easy pita bread pizzas to celebrate. They are sort of a no-brainer, like putting a peanut butter and jelly sandwich in a cookbook, but whatever. I like them and they are fast and easy and a fun thing to do with friends and family, particularly the little ones in your lives.
And it’s like they say, everyone wants to make their own pie:
Ingredients
- 1 Package of Pita Bread
- 1 Can of PIzza Sauce
- Olive Oil
- Garlic Powder to Taste
- 1 Red Pepper
- 1 Small Can of Sliced Olives
- Green Onions, Chopped
- 2 Mushrooms
Method
Step 1
Split open the pita bread into two halves
Step 2
drizzle a small amount of olive oil onto the slices and use a spoon or brush to lightly coat the slice
Step 3
Sprinkle with Garlic Powder to taste, and then spoon on the pizza sauce
Step 4
Add your desired toppings (in my case, mushrooms, olives, pepper and green onions)
Step 5
Bake in a toaster oven or oven at 350 until the pita crisps and turns brown on the edges, about 15 minutes.

Never thought to use pita bread for pizza! I’m making a black bean spread to substitute for the pizza sauce.
