Hiya – love your site, wanted to contribute. As we head into summer and corn is like 10 ears for 2 bucks, this tasty, creamy raw corn chowder gets super cheap to make! And all it requires is 10 minutes and a blender.
Ingredients
- 6 ears corn, husked, cleaned and kernels cut off
- ½ c raw cashews, powdered (aka ground down in a blender or spice grinder)
- 2 c water
- 2 T olive oil
- 2 cloves garlic
- juice from 1 lime
- 1/4 t onion powder
- 1/8 t cayenne
- 1/2 t salt (or more to taste)
- fresh ground black pepper to taste
Method
Step 1
Mix powdered cashews and water in your blender until creamy, throw in everything else and process until desired consistency. I like to leave some of the corn kernels out and add them in for a little crispy texture in the finished product.

If I were to buy bags of organic frozen corn, do you think a 16 oz bag would equal 6 ears of corn? Thanks.
