Roasted Veggie Tacos

These roasted tacos are pretty tasty.  You can add other things as well like mushrooms, onions, etc.  You can get pretty creative.  Enjoy!

Ingredients

  • 2 Cups of Frozen Corn
  • 3 Zucchinis, diced
  • 1 Poblano Pepper
  • 1 Teaspoon of Chili Powder
  • 1/2 Teaspoon of Cumin
  • 1/2 Teaspoon of Garlic Powder
  • 1/2 Teaspoon of Onion Powder
  • Small Taco Sized Tortillas

Method

Step 1

Steam frozen corn.

Step 2

Preheat oven to 400f degrees.

Step 3

Place zucchini, poblano pepper, and corn on a baking sheet. Place in oven and cook for 20 minutes. After 10 minutes stir veggies and flip pepper.

Step 4

Remove veggies from oven, and dice poblano pepper.

Step 5

Place the veggies and diced pepper in a bowl. MIx veggies together and mix in seasonings.

Step 6

Scoop mixture onto tortillas, top with salsa.

    putting the food in the toaster oven…is like someone else is doing the cooking…after 20mns or so…..I open the oven and surprise…voila..it looks beautiful..!
