Salad Wrap

Let’s get back to basics here. Salad.  I know what you’re thinking, “Basic vegans eat that S*&! so I don’t even bother” (if you got that reference, let’s hang out) I know, I know, I know. But I can’t stop eating this!  It’s so easy to make, so quick, and so very cheap.

Ingredients

  • Lettuces
  • Diced cucumber
  • Diced peaches
  • Halved cherry tomatoes
  • Diced avocado
  • Salt
  • Paper
  • Olive oil
  • 1 "sheet" of lavish bread OR pita pocket
  • Spread I used Trader Joe's Artichoke Tapenade but you can use hummus or this awesome bean dip http://plantbasedonabudget.com/recipe/when-i-dip-you-dip-we-bean-dip/
  • Other options (halved grapes, raisins, shredded carrots, mushrooms, nectarines, you know...salad stuff)

Method

Step 1

Toss together salad ingredients

Step 2

Spread yo spread over half of the lavish bread

Step 3

Dump on your salad and roll out!

Step 4

CHOW DOWN!
