Let’s get back to basics here. Salad. I know what you’re thinking, “Basic vegans eat that S*&! so I don’t even bother” (if you got that reference, let’s hang out) I know, I know, I know. But I can’t stop eating this! It’s so easy to make, so quick, and so very cheap.
- Diced cucumber
- Diced peaches
- Halved cherry tomatoes
- Diced avocado
- Olive oil
- 1 "sheet" of lavish bread OR pita pocket
- Spread I used Trader Joe's Artichoke Tapenade but you can use hummus or this awesome bean dip http://plantbasedonabudget.com/recipe/when-i-dip-you-dip-we-bean-dip/
- Other options (halved grapes, raisins, shredded carrots, mushrooms, nectarines, you know...salad stuff)
Toss together salad ingredients
Spread yo spread over half of the lavish bread
Dump on your salad and roll out!
