February brings us Valentine’s Day AND International Pancake Day! Knock off two holidays at once with these delicious short stacks!
With a basic pancake recipe and our delicious Coconut Whipped Cream for a topping, these stacks come alive!
Use a paring knife to get creative and carve up some fruit! The combinations are endless! Have fun….
Ingredients
- 2 Cups Flour
- 1 Teaspoon Baking Soda
- 1 Teaspoon Baking Powder
- 2 Teaspoons Sugar
- 1/4 Teaspoon Salt
- 2 Cups Soy Milk
- 2 Tablespoons of Veggie Oil
- Fruit of your choice - I used strawberries and blackberries
- Wooden Skewers - cut into 4-5" pieces
- Condiments - syrup or coconut whipped cream
Method
Step 1
Heat up your grill or non-stick frying pan
Step 2
Mix all the dry ingredients together
Step 3
add the soy milk and veggie oil and mix just until combined. Don't overmix!
Step 4
When water bounces on your pan, its hot enough. Then pour on a couple of pancakes, and cook until the middle begins forming bubbles. Flip your cakes and cook the other side until golden.
Step 5
Slice some your fruit, and use a paring knife to carve some strawberry hearts. Chop your pancakes into bite-sized pieces, and start stacking! You can top with the coconut whipped cream and/or syrup or agave.
Step 6
Be creative and have fun!
