I'm always in search of a new vegan breakfast. I found these oats from Laura Miller's  Raw Vegan Sidesaddle Kitchen. It's definitely not a quick, spur-of-the-moment meal but with a little planning ahead you'll have a fun new breakfast for the week. Oh, and groats are buckwheat. Get the whole kernel, not the buckwheat made for oatmeal.  After you make the groats you can eat it with the cashew cream and apples or even just with milk like regular cereal.

â…›teaspoonof stevia (I used coconut sugar mixed with stevia) or any sugar
BAKED APPLES
2apples
1Tablespoonof coconut oil
1teaspoonof vanilla extract
1teaspoonof cinnamon
pinch of salt
CASHEW CREAM
2cupsof cashews
½cupof maple syrup
¼cupof lemon juice
1teaspoonof vanilla extract
pinch of salt
½cupof coconut oil
Instructions
FOR THE GROATS
.Soak buckwheat groats for at least one hour, then rinse.
Combine all remaining ingredients in a medium-sized bowl.
Mix thoroughly.
Spread on a teflex sheet and dehydrate overnight or bake on a silpat in oven at 200 degrees for 1 hour
Pour milk over it. Cereal. Done. (Or keep reading for an even better way of eating it!)
FOR THE BAKED APPLES:
Cut two apples into small slices, toss with coconut oil, vanilla, salt and cinnamon Spread onto a teflex sheet and dehydrate overnight, or bake on a silpat sheet in the oven at 200 degrees for 1 hour
FOR THE CASHEW CREAM:
Soak cashews for at least 1 hour, then strain and add to food processor.
Add maple syrup, lemon juice, vanilla, salt and coconut oil then blend.
Assemble by placing roasted apples, crumble, and optional cream in layers to make a breakfast parfait.
