How To Make an Easy Vegan Meal: Chickpea Sandwich

By : | 6 Comments Category : Blog

Easy, delicious, low-cost Chickpea Sandwich!

I recently started a series of videos to help provide inspiration for easy, quick, low-cost meals. This is one of my favorites! It’s Terrence’s Chickpea Salad, using fresh onion and garlic instead of powders. If you don’t have the fresh onion and garlic, the powders are equally delicious in this recipe. What I like best about this dish is that you can omit ingredients you don’t have on-hand and it’ll still taste great. Don’t have a bell pepper? Don’t have a pickle? No problem … skip ’em! The chickpea salad is about .50-.70 per serving, and I used two slices from a .99 loaf of bread I purchased from WinCo.

This recipe was also a hit on my Week 2 Meal Plan for 1. Make sure to check that out, and subscribe to our YouTube channel for more inspirational videos like this one. And to help us keep Plant Based on a Budget running, check out the ways you can help.

Fantastic solution! When I visit my grandma I rarely have vegan options and am just left with fruit, but this is totally doable. Thanks!

Thanks for the awesome recipe!! Absolutely delicious! The tomato really helps it stay moist. I never thought of putting tomato in the salad. Thanks again!
