Potatoes in Wine2012-05-21

This is a yummy recipe that yields quite a bit and is great with fresh greens. Serves about 4-6.
- about 16 red and or yellow potatoes (I do a mix)
- 3 Tbs margarine
- 8 tiny white onions
- bay leaf
- salt and pepper
- dry white wine (half a bottle or so) - I used Savignon Blanc
Melt the margarine in a large skillet. Peel the onions and slice them into thirds, saute them a few minutes in the "butter".
Peel the potatoes and cut them into 1/4-inch thick slices. Add potatoes in the skillet with some salt and pepper and a small bay leaf.
Pour wine over potatoes until they are just covered. Cover the pan the let it cook gently for at least an hour. Check often to make sure wine is still covering potatoes. Add some if needed and stir a few times.
When the potatoes are done, remove them along with the onions and transfer to a serving dish. Bring the leftover sauce to a quick boil in the skillet and pour it over the potatoes and onions.
