A Panoply of Potatoes

I had a bunch of mini potatoes and sweet potatoes laying around so I scrubbed em up, peeled um down, and steamed em so hard. Now I have mashed potatoes!

Mashed potatoes are super easy to make, and you don’t need to have much else beside potatoes.

Ingredients

  • potatoes I used 9 (mix of mini, sweet, and russet)
  • garlic
  • 1/2 c (roughly) veg broth
  • 1/2 c (roughly) non dairy milk- unsweetened
  • salt and pepper
  • 2 T non dairy butter- optional

Method

Step 1

Wash, peel, and chop, and steam your potatoes.

Step 2

saute as much garlic as your like and them add the steamed potatoes

Step 3

use a hand mixer to whip them into shape

Step 4

add salt and pepper, broth, non dairy milk and non dairy butter if using. I always add more broth than milk to give it more flavor. Add just enough liquid to get the consistency you like then add a tad more since it soaks it up if you let it sit for a bit.

Step 5

whip them up again with your hand mixer and chow down!
