Flavorful and protein pack, these black bean burger will win over the veggie-skeptics in your life. I’m trying to ditch all the bread I eat; these were great topped with the cheese from this recipe and wrapped in lettuces.
- 1 15.2 oz can of black beans drained and rinsed
- 1 green bell peper
- Half a red onion
- 2 cloves garlic
- 1/2 teaspoon salt
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 3/4 cup cooked quinoa
- 1 handful of chopped cilantro
- A few dashed of chili powder (optional)
- Bread crumbs with some garlic powder for coating
- Burger fixins (tomatoes, avocado, lettuces, onions...you know what to do)
Add all ingredients minus the quinoa and fixins into a food processor and pulse until combined leave a little chunky if possible. Then add quinoa and either mix in with a wooden spoon or pulse a couple times to combine it.
Scoop out small handfuls (it will probably be pretty mushy) and drop into a bowl of breadcrumbs to fully coat it.
Drop onto hot (low to medium) oiled pan and reshape with the back of spatula.
Let it dry out and then flip. About 8 minutes on each side depending on thickness. Lower heat if they are burning before the start drying out.
Once dry on both side add fixins and CHOW DOWN!
