Black Bean & Quinoa Burger

Summer time barbecues are one of my favorite things in the world.  When I switched to a plant based diet, I immediately started looking for ways to keep grilling.  These black bean and quinoa patties are a great option for summer cookouts without all the added fat and salt from the store bought veggie patties.

Ingredients

  • 1 Can of Black Beans, rinsed and drained
  • 1 Cup of Quinoa
  • 1/3 Cup of BBQ Sauce
  • 2 Cloves of Garlic
  • 1/2 Cup of Onion, diced
  • 1 Tablespoon of Liquid Smoke
  • 2 Cups of Water
  • 1 Cup of Whole Wheat Bread Crumbs
  • Buns

Method

Step 1

Place quinoa in a pot with 2 cups of water. Bring to a boil, lower heat, and simmer until Quinoa has absorbed water.

Step 2

Place cooked quinoa in the refrigerator to cool.

Step 3

While quinoa is cooling, place beans, BBQ sauce, onion, garlic, and liquid smoke into a food processor. Pulse until a paste is formed. If you do not have a food processor, place in a bowl and mash with a fork or potato masher.

Step 4

Mix quinoa into the bean mixture.

Step 5

Stir in bread crumbs, and place in refrigerator for a half hour.

Step 6

Remove mixture from refrigerator and form into 4 - 5inch patties. Make sure they are no more than half an inch thick.

Step 7

Cook in a non stick pan or on a grill until both sides are crispy.

Step 8

Place in bun, and top with your favorite burger toppings.
