- 1 (10-ounce) bag of Path of Life (almost) Scratch Brown Rice & Quinoa
- 1 ½ tablespoons of fresh lemon juice
- 1 ½ tablespoons of fresh lime juice
- 2 tablespoons of packed freshly minced cilantro
- 1 (15-ounce) can of black beans, drained
- ¾ cup of corn kernels
- 1 large avocado, pitted and sliced
- 2 cups shredded lettuce
- 2 roma tomatoes, diced
- ½ cup of diced red onion
- 1 jalapeno, sliced (optional)
- Hot sauce, optional
Cook the Path of Life (almost) Scratch Brown Rice & Quinoa according to the package instructions.
Stir in lime and lemon juice and minced cilantro.
To assemble, add about ¾ cup of Path of Life (almost) Scratch Brown Rice & Quinoa to three bowls, top each bowl with ½ cup of black beans, ¼ cup of corn kernels, ⅓ of the avocado slices, lettuce, tomatoes, red onion, and jalapeno (if using). Drizzle with hot sauce, if using.
