Cheapest Pasta Ever

I threw together this pasta for the Plant Based on a Budget Challenge meal plan for one, week one and it seemed to be well-received, so I thought I’d create a recipe page for it. If you buy the pasta in bulk, this meal is incredibly inexpensive and super quick to make. You can throw whatever veggies you have, I just happened to have broccoli on the meal plan grocery shopping list.

Ingredients

  • box of pasta
  • 1 tbs oil
  • 3 garlic cloves, minced
  • 1/2 yellow onion, diced
  • 1 1/2 cups of broccoli, chopped
  • 15 oz can of tomato sauce
  • Italian spices of your choice (I chose: 1 tbs oregano, 1/2 tbs parsley, 1/2 tbs basi)

Method

Step 1

Cook pasta following box instructions.

Step 2

Saute onions and garlic in oil, add broccoli and cook for 2-3 minutes. Add sauce, spices and pasta and mix thoroughly.
