Ingredients
  

  • 3 cups of brown rice, cooked
  • 2 cans of pinto beans
  • 3 cups of shredded lettuce
  • 16 ounces of frozen corn
  • 1 onion, diced (red, yellow, or green, your choice)
  • 1 avocado, diced
  • 1 cup of salsa
  • 1/4 cup of fresh cilantro, chopped (optional)
  • (optional) 1 green bell pepper, sliced in strips, and sautéed with a bit of water and cumin

Instructions
 

  • Precook the rice since it takes the longest. Heat up the beans and corn in separate sauce pans.
  • In each bowl or plate, layer rice, then beans, onion, corn, avocado, salsa, and pile the cilantro and lettuce on top. Add any other veggies you like.
