Chipotle Bowl

It’s like you can make your own veggie bowl like you have at the restaurant Chipotle, at home! You can pretty much do whatever with this– it’s simple and versatile. Enjoy!
Ingredients
- 3 cups brown rice, cooked
- 2 cans pinto beans
- 3 cups shredded lettuce
- 1 16 oz. bag frozen corn
- 1 onion, diced (red, yellow, or green, your choice)
- 1 avocado, diced
- 1 cup salsa
- 1/4 cup fresh cilantro, chopped (optional)
- (optional) 1 green bell pepper, sliced in strips, and sautéed with a bit of water and cumin
Method
Step 1
Precook the rice since it takes the longest. Heat up the beans and corn in separate sauce pans.
Step 2
In each bowl or plate, layer rice, then beans, onion, corn, avocado, salsa, and pile the cilantro and lettuce on top. Add any other veggies you like.

Just tried this tonight for dinner, and we loved it!! We used brown rice in a bag that had garlic and other veggies in it already (just to save time) and it was really really good. Thank you for the great recipe! Can’t wait to try more!
