Chipotle Lime Street Style Tacos2013-01-21

I whipped these tacos up last week and really enjoyed them. They are pretty spicy, so if that is not your thing you will want to adjust. You could use more or less of the chipotle in adobo to adjust the heat. These tacos were quick to throw together. Use the small street style tortillas, and top the tempeh with diced tomatoes, diced onions, and cilantro.

- 1 Package of Tempeh
- 1 Chipotle Pepper in Adobo Sauce, minced
- 2 Tablespoons of Lime Juice
- 1 Teaspoon of Chili Powder
- 1 Teaspoon of Cumin
- 2 Cloves of Garlic, minced
- 3 Tablespoons of Dried Minced Onion
- 1/2 Teaspoon of Smoked Paprika (regular is fine)
- 1/2 Teaspoon of Oregano
- 8 Tortillas
Cut tempeh into 4 pieces.
Boil tempeh in water for 10 minutes.
Remove tempeh from water and let cool.
While tempeh is cooling, mix the chipotle pepper, lime juice, chili powder, cumin, garlic, paprika, oregano, and onion in a small bowl.
Dice tempeh into small pieces.
Place tempeh pieces into a non stick pan and cook for 5 minutes.
After 5 minutes add chipotle mixture to the tempeh and mix well.
Add 1/8th cup of water.
Continue to cook on medium heat for 5 more minutes.
Place tempeh on a small tortilla, and top with cilantro, tomato and onion.
