Chocolate Avocado Mousse2012-05-25

- 4 Ripe Avocados
- 1 Cup Sugar or Sweetener of Choice
- 2/3 Cup Cocoa Powder
- 1 Tbsp Vanilla Extract
Slice open avocados and scoop out the pulp into a food processor. Throw out the skins and seed.
Add in the sugar or other sweetener (we like to use evaporated cane juice--which is just a different way of processing cane sugar), cocoa powder, and vanilla to the food processor.
Food process the mixture until smooth. It should take you less than ten minutes to do this. You can also whisk by hand if you are strong enough, but the end result won't be quit as smooth.
Serve in dessert cups or bowls. Garnish with berries or mint.
You can store in the refrigerator, it will thicken the longer it is cooled.
