Chocolate Coconut Bars2012-04-28

There are a lot of variations of these bars and this is the one I like the best. Most call for condensed milk, but I replaced that with a heavy coconut milk (I used the wrong one for the picture, sorry)- and as you can see from my ingredient photo, I used a graham cracker pie crust because all the regular crackers had honey in them. You can also change out the type of nuts. I chose chopped almonds because they were the cheapest in the bulk bins.
- 1/2 Cup Margarine, melted
- 1 1/2 Cups Graham Cracker Crumbs
- 1/2 Can Regular Coconut Milk (not light)
- 1 1/2 Cups Coconut Flakes
- 1 1/2 Cup Chopped Almonds
- 1 1/2 Cup Chocolate Chips
Preheat oven to 350. Pour margarine into baking dish and sprinkle with graham crackers crumbs. Add coconut milk, even it out with a spatula. Top with coconut flakes, almonds and semi-sweet chocolate chips.
Lightly pack down the ingredients with a spatula.
Bake in preheated oven for 30 minutes. Let cool completely.
