If you’re like me, having plant-based snacks everywhere I go is a must! Won’t leave the house without them! There’s nothing more frustrating than to be out and about and the hunger strikes, leaving you no choice than to find a healthy plant-based in a see of products. These coconut bites from the “Bravo Express” cookbook by Ramses Bravo would be the perfect take-along snack!
Coconut Bites: DIY Snacks!
Making your own snacks at home and in batches is so underrated! You will save so much time and money by taking a few minutes of your week to prepare some. Just pack them in a reusable bag and done! These coconut bites are a great example of affordable and quick snacks to prepare at home!

- 2 cups of diced mango
- 2 ripe bananas (diced)
- 2 cups unsweetened pineapple juice
- 1 teaspoon vanilla extract or 1/2 vanilla bean (cut in half lenghtwise)
- 4 cups unsweetened shredded dried coconut
- 3/4 cup unsweetened shredded dried coconut toasted
Put the mango, bananas, pineapple juice and vanilla extract in a small pot and cook over medium-low heat for about 6 minutes.
If using the vanilla bean: scrape the seeds from the vanilla bean into the pot and discard the pod.
Transfer the mango mixture to a food processor. Add the 4 cups of coconut and process until smooth and firm.
Put the toasted coconut in a bowl or a plate.
Using a small ice-cream scoop or a spoon, scoop out a small amount of the fruit and coconut mixture. Roll into a 1 - inch ball with your hands and then roll into the toasted coconut. Repeat the process with the remaining mixture.
Serve chilled or at room temperature.
