Cucumber Salsa

The name “Cucumber Salsa” is just about a recipe in itself – dice up your cucumbers, add some acid and a little oil, some onion and chile, and you’re pretty much done. But even though this is all dead-simple, it’s delicious, and with the markets filling up with cheap, in-season cucumbers, this is a terrific way to serve a maybe slightly-underused vegetable.

This salsa’s good with chips, and it’s best on anything grilled – the cool, juicy cucumber is a great foil for the char you get from the grill.

  • 2 medium cucumbers, peeled and diced
  • Juice of 1 lemon or 2 limes
  • 1/2 small red onion, minced
  • 2 tablespoons olive oil
  • Decent-sized handful of cilantro, chopped
  • 1-2 chiles (jalapeños, serranos, etc. - just make sure you taste a little piece before you add it to check the heat level); or 3/4 teaspoon red chile flakes
  • salt and pepper


Step 1

Put everything in a bowl and mix together. Add salt and pepper to taste. It's best if you can let it sit for a little while - like half an hour - for everything to come together, but it's also just fine if you eat it right away.
