I decided to make a recipe from their cookbook to see for myself and share it with you. This easy vegetable soup is quick, comforting, so tasty and packed full of nutrients. Here’s to a happy New Year and a healthy new you!
- 4 cups of water
- 2 medium carrots, sliced
- ½ small yellow onion, sliced
- 1 large rib of celery, sliced
- 1 medium zucchini sliced
- ½ (14-ounce) package of extra firm tofu, diced
- 2 ½ tablespoons of Yondu vegetable concentrated broth
In a large pot over high heat, combine water and vegetables.
Bring to a boil, lower heat to medium, and cook the vegetables for 10-15 minutes, or until they are all tender.
Stir in the Yondu and serve hot.
