Grilled Veggies

The weather was great yesterday.  I decided it was time to fire up the grill.  I was going to BBQ some tofu, and wanted a tasty side to go with it.  I had a bunch of veggies in the fridge and threw this together.  It came out really good, and went great with the BBQ tofu.  I used a grill basket.  If you do not have one, you can make one with foil.  Place the veggies on a piece of foil, and roll up the sides so the veggies can not slip off.  But do yourself a favor and pick up a vegetable basket!

Ingredients
  

  • 1 medium Eggplant
  • 1 Squash
  • 1 Zucchini
  • 3 Carrots
  • 1 head of Broccoli
  • 1 teaspoon of Pepper
  • 1/2 teaspoon of Salt
  • 1 teaspoon of Onion Powder
  • 1 teaspoon of Garlic Powder

Instructions
 

  • Mix all seasonings together in a small bowl and set aside.
  • Dice up all the vegetables and place in a large bowl with a lid, or ziplock back.
  • Pour seasoning mix into bowl or bag and toss. Continue to toss until the veggies are covered with the seasoning mixture.
  • Place veggies in a grill basket and cook on grill until veggies have softened.
  • Remove from grill and enjoy!
