Kale Stir Fry

This was a quick lunch I put together yesterday.  I had a bunch of odds and ends in the fridge and didn’t want them to go to waste.  I used the Sorta Spicy Peanut Sauce and was very pleased with the outcome.

This stir fry is a "clean out the fridge" type of recipe. I love being able to use what I have on hand.

  • Prepare Sorta Spicy Peanut Sauce.
  • Add diced onion to non stick, or pan coated with cooking spray.
  • When onion starts to soften, add green bell peppers. Cook for 5 minutes.
  • Add mushrooms, kale, and peanut sauce to pan.
  • Continue to cook until kale and mushrooms have softened.
  • Serve over rice or by itself. Enjoy!
