There is a point where brown bananas go from a snack, to smoothie bananas, to baking bananas. I had a lot of baking bananas on hand so today was a banana bread day.

There is a point where brown bananas go from a snack, to smoothie bananas, to baking bananas. This bread uses them up so you can still enjoy them.

Ingredients
  

  • 2 1/2 cups of flour
  • 1 1/2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 3 medium overripe bananas mashed
  • 3 Tablespoons of ground flax seed mixed with 3 Tablespoons coconut water (or regular water)- let is 5 minutes
  • 1/2 cup of vegetable oil
  • 1 cup of sugar
  • 1 teaspoon of vanilla extract
  • 1 cup of coconut milk (I used Trader Joe's canned coconut cream)

Instructions
 

  • Preheat over to 350°
  • Flax ground flax seed and water and let sit 5 minutes
  • Combine flour, baking soda, backing power, and salt
  • Mixed mashed bananas, oil, sugar, vanilla extract, coconut milk or cream, and flax mixture once 5 minutes is up.
  • Slowly add wet ingredients to the dry ingredients.
  • Pour into 9 x 5 loaf pan and bake for 70 minutes or until a toothpick comes out clean.
