There is a point where brown bananas go from a snack, to smoothie bananas, to baking bananas. I had a lot of baking bananas on hand so today was a banana bread day.
- 2 1/2 cups flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 medium overripe bananas mashed
- 3 Tablespoons ground flax seed mixed with 3 Tablespoons coconut water (or regular water)- let is 5 minutes
- 1/2 cup vegetable oil
- 1 cup sugar
- 1 tsp vanilla extract
- 1 cup coconut milk (I used Trader Joe's canned coconut cream)
Preheat over to 350°
Flax ground flax seed and water and let sit 5 minutes
Combine flour, baking soda, backing power, and salt
Mixed mashed bananas, oil, sugar, vanilla extract, coconut milk or cream, and flax mixture once 5 minutes is up.
Slowly add wet ingredients to the dry ingredients.
Pour into 9 x 5 loaf pan and bake for 70 minutes or until a toothpick comes out clean.
