Moist Banana Bread

There is a point where brown bananas go from a snack, to smoothie bananas, to baking bananas. I had a lot of baking bananas on hand so today was a banana bread day.


  • 2 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 medium overripe bananas mashed
  • 3 Tablespoons ground flax seed mixed with 3 Tablespoons coconut water (or regular water)- let is 5 minutes
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup coconut milk (I used Trader Joe's canned coconut cream)


Step 1

Preheat over to 350°

Step 2

Flax ground flax seed and water and let sit 5 minutes

Step 3

Combine flour, baking soda, backing power, and salt

Step 4

Mixed mashed bananas, oil, sugar, vanilla extract, coconut milk or cream, and flax mixture once 5 minutes is up.

Step 5

Slowly add wet ingredients to the dry ingredients.

Step 6

Pour into 9 x 5 loaf pan and bake for 70 minutes or until a toothpick comes out clean.
