I am in love with the vegan jerky you can buy in the store. The problem is the stuff can get pricey. There are tons of examples of how to make it online. I decided to give it a try. It did not come out quite like the store bought version, but it is a pretty tasty snack.
- 8oz of Mushrooms (any kind is fine)
- 1/2 Cup of Vital Wheat Gluten
- 2 Tablespoons of Soy Sauce
- 2 Tablespoons of Hot Chili Oil
- 1 Teaspoon of Garlic Powder
- 1 1/2 Teaspoons of Onion Powder
- 2 Tablespoons of Brown Sugar
- 1/2 Cup of BBQ Sauce
Place mushrooms in food processor. Process until chopped in small pieces.
Add soy sauce, oil, garlic powder, onion powder, sugar, and wheat gluten. Process until smooth.
Pre heat oven to 400f degrees.
While oven is preheating, remove mushroom mixture from processor. Place on a flat surface and shape into a thin rectangle. I used a rolling pin to get it flat.
Slice the rectangle into thin strips. They should be about an inch wide.
Place strips on baking sheet. Cook for 15 minutes and then flip. Cook for 15 more minutes.
Remove from oven and brush on BBQ sauce on both sides of strip. Cook for 5 - 10 more minutes, or until sauce has thickened.
Remove from heat and enjoy!
