Here is a simple, quick, and easy treat for any occasion! Much quicker to make than traditional baklava.

  • 2 small sweet potatoes
  • 1 Tablespoon of earth balance
  • 1 Tablespoon of soy creamer
  • 1 1/2 Tablespoons of evaporated cane sugar
  • 1 Tablespoon of vanilla
  • 1/4 teaspoon of cayenne
  • 1 teaspoon of pumpkin pie spice
  • 1 box filo dough shells


  • 1/4 cup of chopped walnuts
  • 1/4 cup of chopped pecans
  • 1/4 cup of maple syrup
  • 1/8 teaspoon of kosher salt
  • mint for garnish


  • Bring a pot of water to a boil. Preheat oer to 375. While the water is heating up, clean and peel the sweet potato. Cut the potato into small pieces. When the water is boiling, add the potato and cook until done (about 8-10 minutes)
  • When the potatoes re done, add the earth balance, soy creamer, sugar, vanilla, cayenne, and pumpkin pie spice. Mix well until creamy.
  • Add the formed filo dough to a small cup cake pan. Fill with the sweet potato mixture
  • In a skillet, add the walnuts and pecans and heat for 2-3 minutes over medium heat. When fragrent, add the salt and syrup, stir until tick and candy like.
  • Add the maple mixture to the top of each baklava treat.
  • Add to the oven and bake for 20 minutes. Allow to cool before serving. Serve with fresh mint! Enjoy!
