Open Face Baklava

Here is a simple, quick, and easy treat for any occasion! Enjoy



  • 2 small sweet potatoes
  • 1 tbs. earth balance
  • 1 tbs. soy creamer
  • 1 1/2 tbs. evaporated cane sugar
  • 1 tbs. vanilla
  • 1/4 tsp. cayenne
  • 1 tsp. pumpkin pie spice
  • **The Topping**
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped pecans
  • 1/4 cup maple syrup
  • 1/8 tsp kosher salt
  • mint for garnish
  • 1 pack formed filo dough


Step 1

Bring a pot of water to a boil. Preheat oer to 375. While the water is heating up, clean and peel the sweet potato. Cut the potato into small pieces. When the water is boiling, add the potato and cook until done (about 8-10 minutes)

Step 2

When the potatoes re done, add the earth balance, soy creamer, sugar, vanilla, cayenne, and pumpkin pie spice. Mix well until creamy.

Step 3

Add the formed filo dough to a small cup cake pan. Fill with the sweet potato mixture

Step 4

In a skillet, add the walnuts and pecans and heat for 2-3 minutes over medium heat. When fragrent, add the salt and syrup, stir until tick and candy like.

Step 5

Add the maple mixture to the top of each baklava treat.

Step 6

Add to the oven and bake for 20 minutes. Allow to cool before serving. Serve with fresh mint! Enjoy!
