Sounds good, doesn’t it? You’ll only need the mushrooms, spinach, cherry tomatoes, barbecue sauce, and your favorite bread. That’s it!
You could try to swap the oyster mushrooms for portobello if you don’t find them easily. Even though the flavor won’t be the same, the texture will be as meaty and super yummy. This recipe calls for tomato and spinach but the truth is you could put any of your favorite sandwich ingredients. Some sliced avocado would be amazing! Or spread some vegan mayo on the bread and layer romaine lettuce. So many options!

- 5 ounces of oyster mushrooms
- ½ ounces of baby spinach
- A couple of cherry tomatoes
- 1 tablespoons of barbecue sauce
- 2 slices of your favorite bread
The only thing here that requires cooking are the mushrooms. Tear them into thin strips and cook them on the grill pan, with some olive oil. It takes 5 minutes!
Season them with salt and pepper and toss them in some BBQ sauce so they get nicely coated.
