If you are tired of eating the same vegan cheese, lettuce, and tomato sandwich over and over again, this recipe will make you very happy! A juicy and meaty oyster mushroom sandwich! Sounds good, doesn’t it? You’ll only need the mushrooms, spinach, cherry tomatoes, barbecue sauce, and your favorite bread. That’s it!

You could try to swap the oyster mushrooms for portobello if you don’t find them easily. Even though the flavor won’t be the same, the texture will be as meaty and super yummy. This recipe calls for tomato and spinach but the truth is you could put any of your favorite sandwich ingredients. Some sliced avocado would be amazing! Or spread some vegan mayo on the bread and layer romaine lettuce. So many options!

One amazing way to take this sandwich to the next level is spreading some pesto. Imagine the juice and meaty mushrooms combined with the herby and nutty flavor of the basil pesto. Choose a rustic country-style bread and you’re set. You go from yummy juicy sandwich to yummy juicy fancy sandwich. Invite some friends over for lunch and blow them away with these new creations.

  • 5 ounces of oyster mushrooms
  • ½ ounces of baby spinach
  • A couple of cherry tomatoes
  • 1 tablespoons of barbecue sauce
  • 2 slices of your favorite bread


Step 1

The only thing here that requires cooking are the mushrooms. Tear them into thin strips and cook them on the grill pan, with some olive oil. It takes 5 minutes!

Step 2

Season them with salt and pepper and toss them in some BBQ sauce so they get nicely coated.

Step 3

Assemble your sandwich and enjoy!
