Pistachio Crusted Tofu

I’m always looking for new ways to prepare tofu and this one sounded great. I found this recipe online and modified it quite a bit. I hear you saying pistachios are expensive, but my local corner store has them in bulk and a half cup cost me $1.50. In total, I spent about $4 to whip this up.
It can be served with rice or pasta and a little sauce on top goes a long way – I used hoisin sauce.
Ingredients
- 10 oz Tofu (1 block)
- 1/2 Cup of Pistachio Nuts (shelled)
- 3/4 Cup Bread Crumbs (I used an italian herb brand)
- 2 Tablespoons + 1/2 Tablespoon of Soy Sauce
- 2 Tablespoons Hoisin Sauce
- 1/8 Teaspoon Sriracha
- Black Pepper to Taste
Method
Step 1
Preheat the over to 400
Step 2
Cut the tofu into fillets, and brush on 2 tablespoons of soy sauce on both sides. Allow to sit and marinate for about 10 minutes
Step 3
Using a food processor or similar device, pulse the pistachios into fine crumbs. Place them in a bowl with the bread crumbs and pepper and mix.
Step 4
In another shallow bowl add the 1/2 Tablespoon of soy sauce, hoisin sauce, and sriracha.
Step 5
Dip the tofu fillets into the mixture, then into the bread crumb mixture, and place on a lightly oiled baking sheet. You may want to add more bread crumbs to the fillets by gently pushing it down on top.
Step 6
Bake for about 20 minutes or until the bread crumbs turn golden brown. Serve with pasta or rice and add a bit of sauce to the top - i used hoisin.
