This recipe is my pistachio hummus. The pistachio flavor is mild at first- but really comes through the next day. If you plan on making this for a party, let it sit for a day!

Nutrient-Packed Pistachios

Pistachio nuts are so much more than a quick snack! They are full of healthy fats, digestion aiding fiber, and filling protein. Another strong point for these nuts is if it’s Vitamin B6 you’re after then pistachios are one of the foods with the highest concentration of it. Pretty mighty for a tiny nut, right?

These little nuts are not one of the latest superfood fads, people have been eating these for a while. Since 7000 BC to be exact. So it seems their unmistakable flavor and high nutritious benefits have been known and appreciated for centuries.

Green Pistachio Hummus

One of the things we love the most about this Pistachio Hummus is that it is a super simple recipe and it uses very few ingredients while sounding fancy at the same time. The word pistachio does the trick even though they can be fairly inexpensive, especially if you buy the snack version which is salted and roasted.

So, remember, next time you are planning a dinner party or a fancy appetizer platter, this is the hummus for you. It will delight your friends and keep them wondering.

Green Pistachio Hummus

A super tasty green Pistachio Hummus recipe to enjoy! You absolutely have to give this delicious fancy spread a try and spread the word!

Ingredients 

  • 3/4 cup of pistachios (roasted/salted)
  • 2 cans of garbanzo beans (reserve the water)
  • 1/4 cup of olive oil
  • 1 Tablespoon of cumin
  • 2 Tablespoons of tahini (or more to taste)
  • 1/2 lemon, juiced
  • 3 garlic cloves
  • 1 Tablespoon of chopped parsley (for garnish)

Instructions 

  • In the bowl of a food processor, add the pistachios, reserved garbanzo bean water and oil. Wiz on high for 1 minute.
  • Add the remaining ingredients (minus the parsley), wiz for 1-2 minutes, scraping down the sides occasionally.
  • Sprinkle the parsley on top of the hummus. Add a few pistachio pieces for a textural difference.

Notes

The pistachio flavor is mild at first- but really comes through the next day. If you plan on making this for a party, let it sit for a day!

    Just made this one and it’s incredible!!! The subtle flavor of pistachio is so nice in this mix and yes, it needs all that cumin. Thought perhaps was a typo and should be 1 tsp. so went lightly. Added extra garlic and lemon to mine as well. Fab recipe!!
