This is one of my go-to choices for weekly recipe planning. I buy quinoa in bulk, and throw whatever veggies I have in the mix. Sometimes I’ll add finely chopped greens, or I’ll switch up the olives using black or kalamata. It’s always good.
In a small pot, bring one cup quinoa, buillon cube and two cups water to a boil. Cover with lid, lower heat and let simmer for 15-20 minutes. When it's nice and fluffy, let sit until cooled. *Placing it in the refrigerator will expedite this process
Add chopped tomatoes, diced cucumber (I put 1/2 to 1 full cucumber, depending on your preference), onion and olives. Mix well and enjoy!
