Hiya – love your site, wanted to contribute. As we head into summer and corn is like 10 ears for 2 bucks, this tasty, creamy raw corn chowder gets super cheap to make! And all it requires is 10 minutes and a blender.


  • 6 ears corn, husked, cleaned and kernels cut off
  • ½ c raw cashews, powdered (aka ground down in a blender or spice grinder)
  • 2 c water
  • 2 T olive oil
  • 2 cloves garlic
  • juice from 1 lime
  • 1/4 t onion powder
  • 1/8 t cayenne
  • 1/2 t salt (or more to taste)
  • fresh ground black pepper to taste


Step 1

Mix powdered cashews and water in your blender until creamy, throw in everything else and process until desired consistency. I like to leave some of the corn kernels out and add them in for a little crispy texture in the finished product.

    If I were to buy bags of organic frozen corn, do you think a 16 oz bag would equal 6 ears of corn? Thanks.

    I just looked this up and found that a medium ear of corn is equal to approximately 3/4 c of corn. So, for this recipe 4 1/2 cups of corn should be good. I’m going to try to use frozen corn for this soup, and we’ll see how it goes.
