These super easy potatoes are a great side dish for the upcoming fall evenings. The roasted garlic and rosemary makes this dish a warming treat.
These are easily doubled, etc…
- 15 Small Red Potatoes, with a strip peeled around the middle, to allow flavor to cook in
- 3 Tablespoons of Extra Virgin Olive Oil
- 5 Garlic Cloves, Crushed
- 1 Shallot, Thinly Sliced
- 1 Heaping Tablespoon of Fresh Rosemary (about 3 sprigs)
- Salt and Pepper to taste
Preheat the oven to 350.
Mix all the ingredients in a bowl and make sure the potatoes are thoroughly coated.
Pour everything into a baking dish and bake until the potatoes are tender, about 50 minutes.
