Ingredients
  

  • 15 small red potatoes with a strip peeled around the middle, to allow flavor to cook in
  • 3 Tablespoons of extra virgin olive oil
  • 5 cloves of garlic crushed
  • 1 shallot thinly sliced
  • 1 Tablespoon of fresh rosemary about 3 sprigs
  • Salt and Pepper to taste

Instructions
 

  • Preheat the oven to 350.
  • Mix all the ingredients in a bowl and make sure the potatoes are thoroughly coated.
  • Pour everything into a baking dish and bake until the potatoes are tender, about 50 minutes.
