The Ingredients

  • Noodles: Use any kind of noodles or pasta of choice. I used al dente linguine pasta because it was what I had on hand at the time and was most budget-friendly, but udon noodles are a very common choice for teriyaki noodles. If you are gluten-free, use gluten-free noodles of choice such as brown rice noodles. 
  • Garlic: Fresh garlic cloves will add the best aromatic depth of flavor. 
  • Ginger: Similarly to the garlic, fresh ginger is best and adds a spicy, warm, slightly zesty aroma to the teriyaki sauce. 
  • Soy sauce: A foundation to a homemade teriyaki sauce. If you are gluten-free, use tamari.  
  • Sugar: The classic sweetener of choice in teriyaki sauce is mirin, but any other sweetener of choice will work. I’ve used maple syrup, agave, and brown sugar and all work. 
  • Rice vinegar: Adds acidity that balances the saltiness in the soy sauce and the sugar in the sweetener. 
  • Vegetables: I used carrots and green beans to add nutrition and keep it simple.
  • Cilantro: Fresh cilantro isn’t the typical choice, but adds freshness. If you prefer something more authentic, garnish with sesame seeds, green onions, or peanuts or cashews as a satisfying crunch! 

What vegetables can I add to teriyaki noodles?

A variety of vegetables can be added to teriyaki noodles. Below are some popular choices we love, but don’t be afraid to use what you have. Frozen or fresh vegetables are great.

  • Bell peppers
  • Broccoli florets 
  • Snow peas or snap peas
  • Mushrooms
  • Spinach or bok choy 
  • Green or red cabbage
  • Water chestnuts
  • Baby corn

How to Make Easy Teriyaki Noodles

  • 1) Cook the pasta or rice noodles according to package instructions. 
  • 2) While the pasta cooks, prepare the teriyaki sauce. In a small bowl, combine the garlic, ginger, soy sauce, sweetener, and rice vinegar. 
  • 3) In a large skillet heated over medium heat, warm 1 tablespoon of vegetable oil or broth. Once warm, add in the matchstick carrots and green beans and cook, until they soften, about 3-5 minutes. 
  • 4) Drain the noodles and place it back in the pot. Transfer in the carrots and green beans, as well as the teriyaki sauce. Increase the heat to medium-high heat and toss together until the sauce is warm and the garlic is fragrant, about 2-3 minutes. 
  • 5) Toss in the freshly chopped cilantro, and remove the noodles from the heat. 
  • 6) Serve yourself a bowl of teriyaki noodles immediately while warm and enjoy!

Does teriyaki sauce taste good with ramen noodles?

Yes, ramen noodles would be great here. If you are using instant ramen noodles, discard the flavor packet. 

How do I prevent the noodles from becoming mushy?

The best way to prevent mushy noodles is to be careful not to overcook. Be sure to follow the cooking instructions on the package and cook until tender, but chewy. Additionally, if the noodles are cooked well before the rest of the dish is ready, it can be helpful to rinse the noodles to stop the cooking process. 

Can I make teriyaki noodles ahead of time?

These stir fry noodles are a great meal prep recipe, but as it chills in the fridge, it will absorb some of the teriyaki sauce. To prevent this, initially toss the noodles with just half of the teriyaki sauce and drizzle with the final sauce when reheating to serve for meal prep. This will keep it as flavorful as possible.

  • Use a wok, if you have one. A wok has a wide, shallow shape with high, sloping sides. This design is perfect for quick and even heating, ensuring that the noodles become slightly crispy and infuses the teriyaki sauces savory flavors throughout the dish. 
  • Adjust the taste of the sauce. When you mix the sauce ingredients together in the small mixing bowl, taste and make sure the sweet and salty flavors are well balanced. If you prefer a sweeter teriyaki, increase the sweetener. If you prefer a saltier teriyaki, increase the soy sauce. 
  • Cook the noodles until al dente. Keep in mind that the noodles will continue to cook when tossed with the teriyaki sauce. For this reason, it is important to cook the noodles until al dente to prevent them from being mushy.

Storage Instructions

Cool the leftover noodles to room temperature, then transfer to an airtight storage container. Tightly cover and refrigerate for up to 4 days. Leftovers will reheat best in a large skillet on the stovetop or in the microwave until lightly warmed.

Ingredients 

  • 8 ounces of linguine
  • 4 garlic cloves, minced
  • 1 tablespoon of fresh grated ginger
  • ½ cup of soy sauce
  • 3 tablespoons of sweetener (I used a mayple syrup agave blend) OR brown sugar
  • 2 teaspoons of rice vinegar
  • 2 medium carrots
  • ½ cup of chopped verts or green beans
  • ½ cup of chopped cilantro
  • Optional – add beans to make it more filling, I like pinto

Instructions 

  • Cook linguine according to the package
  • While that cooks prepare the sauce by combining the garlic, ginger, soy sauce, sweetener, and rice vinegar in a small bowl and mix.
  • Chop carrots into small matchsticks and cook with green beans until they soften a little bit (Add beans here if using)
  • When the pasta is done, drain it and put it back in the pot. Add in veggies and HALF the sauce. If you're not going to eat it right away you'll need the extra sauce because it absorbs into the noodles. So save the other half for when you're ready to eat it. Cook it just a bit to take some of the bites out of the raw garlic. Toss in cilantro once removed from heat.
