Southwest Sloppy Joes

Part of being plant-based on a budget is being conscious of the time we spend in the kitchen. For my Loma Linda dinner, I chose to make us a southwest spin on a sloppy joe sandwich. I’m a firm believer that avocado makes everything amazing, and it sure complimented this sandwich perfectly!

Ingredients

  • 1 package of Loma Linda Sloppy Joe Meal Starter
  • 1 tablespoon ground cumin
  • 4 sandwich rolls
  • 1 cup of guacamole
  • ¾ cup of sliced red onion
  • Handful of cilantro

Method

Step 1

Prepare Sloppy Joe Meal Starter according to package instructions.

Step 2

Stir cumin into Sloppy Joe filling.

Step 3

Spread each sandwich roll in two slices and spoon Sloppy Joe filling on one side and guacamole on the other side.

Step 4

Top the guacamole roll with red onion and cilantro and close the sandwich.

Step 5

Enjoy!
