Soyrizo Quesadilla

This is so very quick and easy to make and it’s totally kid friendly especially if you and your kiddos like regular chorizo. I know meat eaters who say this taste like the real deal if not better.  Make it for lunches, Meatless Mondays, even just for a snack! I made this 3 times last week. When I find something I like, I like the crap outta it!

Add a little salsa (or if your me add chips inside).


  • 1-2 small sweet potatoes
  • 1 tortilla
  • 1/4 cup white beans
  • kale
  • 3 Tablespoons soyrizo
  • 1 handful of edamame
  • Pretty much anything you want to add or subtract to your liking


Step 1

Stab your sweet potato a few times with a fork or knife and microwave it until it's soft - 3ish minutes

Step 2

Heat up your beans and soyrizo and kale and emamame (kale and edamame in a separate pan)

Step 3

Heat up your tortilla on on open flame (or leave it how it is if you have a electric stove) and smash and speard the sweet potato on one half and smash and spread the beans and soyrizo on the other half.

Step 4

Add in your cooked kale and edemame

Step 5

Fold it half and heat in a pan to get it a little crunchy on the outside

Step 6

Chow Down!
