Spicy & Sweet Glazed Tofu on Greens

This dish takes a little longer than usual, clocking in around 35 minutes total, and around 6 bucks for 3 servings (not including the staples which I already had), but it’s worth it. Yeah, there is some sugar, and some oil, and some sodium.  But let’s get a little crazy.

I didn’t become a fan of tofu or bok choy until I became vegan, but now I love both.  They are great for you and can really be used in so many ways.


  • 1 block of tofu, sliced into filets
  • 2 bunches of bok choy (or other greens) halved or quartered
  • 1 tablespoon canola/veggie oil
  • 3 garlic cloves, minced
  • 1" piece of ginger, peeled & grated
  • 1/4 cup of tamari
  • 1 tablespoon of brown sugar
  • 2 teaspoons of sesame oil


Step 1

Put 2 cloves of minced garlic, the ginger, tamari, brown sugar, and the sesame oil in a bowl and mix it together.

Step 2

In a pan, add a splash of water, the bok choy, and 2 cloves of minced garlic. Cook until the leaves begin to wilt, about 4 minutes.

Step 3

In a separate pan, heat the canola oil and brown the tofu, about 3 minutes a side.

Step 4

Pour the mixture on top, coating the tofu, and cook until it thickens, about 4 minutes.

Step 5

Add the bok choy and gently mix it together. Cook for about 2 minutes.

Step 6

Serve it up. Suck it down.

Jake switched to a plant based diet in 1996 and quickly realized he had no idea how to cook. All these years later and he's still trying to figure it out...
