Ever since strawberry season hit, we’ve been buying them by the half-flat from a farm down the road. Fresh organic berries are pretty perfect already, but try them in this refreshing strawberry mint sorbet and you will be even more impressed!

All you need are three ingredients plus some water to make the best strawberry sorbet!

  • Strawberries: This vegan sorbet is perfect for the summer when strawberries are in season. Not only do they look and taste better but their prices are also lower! When fresh isn’t available you can use frozen strawberries but make sure you let them thaw before you add them to the blender (if it’s not high-powered).
  • Mint: Fresh mint flavor makes this strawberry sorbet really pop! I prefer spearmint for its less intense flavor over fresh peppermint.
  • Sugar: Just plain old sugar! But make sure you are using a vegan brand of sugar since some sugar is unfortunately processed in ways that make it non-vegan.

How To Make Strawberry Mint Sorbet 

  • 1) Wash and hull strawberries.

  • 2) Separate leaves of mint from the stem.
  • 3) Combine strawberries, sugar, mint leaves, and water in a blender. Puree until smooth.
  • 4) Freeze according to your ice cream or sorbet maker’s instructions. When the sorbet is frozen, serve immediately or store in the freezer until ready to enjoy

Expert Tips 

  • Use organic strawberries. If you can swing the additional expense. They are better for you and often have the best flavor and sweetness.
  • Wash the fruit. When eating strawberries, I prefer to place them in a bowl of cold water to wash them. Then after hulling them, I repeat this process again.
  • Freezing leftovers. Store the leftovers in the freezer for up to one month. To serve again, let the sorbet sit on the counter for 5-10 minutes to let it soften up a bit.

FAQs

How do I make strawberry sorbet without an ice cream maker?

Homemade sorbet recipes need an ice cream maker to give it a creamier texture but if you don’t have one you can prepare it granita-style. Freeze the strawberry mixture overnight in a baking pan. When you’re ready to serve, scrape the sorbet with a fork until it’s fluffy.

Do frozen fruits and vegetables taste as good as fresh?

Yes, they do. While it’s always a dilemma to know whether we should focus on buying produce fresh or mainly from the frozen section, they are both actually good options!

It’s great to shop seasonally with an emphasis on items that are on sale and in season, along with enjoying the freshest, most flavorful tastes. However, buying frozen veggies and fruits is a good idea too!

Frozen berries are often picked at their most ripened state and they’re handy to have on hand for your smoothies.  Frozen chopped veggies for your stir fry can also save you so much time and effort. So our advice is, to go with your gut (and of course, budget!) and buy whatever is affordable.

Variations

  • Use a different berry. Go ahead and use those blueberries or raspberries if you want for sorbet but keep in mind that you’ll need to adjust the sugar according to which fruit you’ll be using since berries have different levels of sweetness.
  • Adjust the sugar. When it comes to sweetness, we all have different tastes so make sure you add sugar in small increments to adjust the sweetness of the sorbet to your liking.
  • No mint. That’s ok you can leave it out for a vibrant strawberry sorbet or swap it with another fresh herb such as basil or go for some citrus flavor and add lemon zest and a bit of freshly squeezed lemon juice!
