Still getting around to doing your holiday baking? While everyone else is making cookies, give these brownies a try! Enjoy as is, or top them off with your favorite vegan ice cream or coconut whip cream. To make these brownies a little more festive you can top them off with broken vegan candy cane pieces or sprinkles.
- 1 cup all-purpose flour
- 3/4 cup (unbleached, vegan) sugar
- 6 Tbs cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup water
- 2 tablespoons coconut oil (canola should work as well)
- 1/2 cup unsweetened applesauce
- 1 tsp vanilla extract
- 3/4 cup vegan chocolate chips
Preheat the oven to 350ºF and lightly grease a square casserole dish or line with foil.
Combine and mix all the wet ingredients in one bowl. In a separate bowl, mix the dry ingredients (except for the chocolate chips) and slowly add them to the wet mixture.
If you want chips inside the brownies, add them to the batter. Otherwise, pour the mixture into the pan and sprinkle the chips on top of the batter before baking.
Bake in the oven for 30 minutes, or until a toothpick comes out clean.
Allow to cool (at least slightly) before cutting and serving. Top with vegan ice cream, whipped cream or sprinkles for a more festive appearance, or enjoy with a glass of non-dairy milk.
