  • Sweet potato: For a moist and tender sweet potato choose the orange-skinned variety. These are sometimes called yams but aren’t really yams. They have bright orange flesh and cook up deliciously sweet and are perfect for toast.
  • Banana and cinnamon: A simple fruit and spice combination to use for topping your toasts.

Variations

There are lots of sweet and savory sweet potato toast toppings to explore! Here are some favorites.

  • Avocado: Mash up an avocado on top and sprinkle with a bit of tajin or everything bagel seasoning.
  • Hummus: Use your favorite classic hummus or try something a bit different like this yellow lentil hummus.
  • Nut or seed butter: Along with some crunchy nuts or fresh fruit is a winning combination.
  • PBJ: Need I say more? Use your favorite peanut butter and any flavor of jam on top of the cooked sweet potato.
  • Guacamole and salsa: Skip the cinnamon and banana and go for a slightly spicy version.
  • Refried beans: And follow it up with some pico de gallo.

Expert Tips and FAQs

  • Cut the sweet potato into even slices so they all cook in the same amount of time.
  • Skip the banana and cinnamon for one of the other savory options.
  • Use orange sweet potatoes for a sweeter flavor.
Can I cut rounds instead?

Yes, you certainly can! I get it – slicing a sweet potato lengthwise might make it look more like toast but it’s difficult to manage. If you opt for rounds instead just make sure you still slice them in quarter-inch thick slices.

Can I make sweet potato toast in advance?

Yes, you can! Feel free to double or even triple this recipe to make more pieces. Cook them as directed in the recipe and then cool them completely. Store them in an airtight container for up to five days.

When you’re ready to eat, simply take out the amount you want to eat and heat them in the oven at 350° F until heated through about 5-8 minutes.

  1. Can the sweet potatoes be cooked or reheated in the air fryer? How does the time/temp to cook change?

    1. That should work! We from plant-based on a budget haven’t tried that out yet so you might have to tinker with the temp and time settings! Please let us know how it turns out 🙂
