Sweetheart Short Stacks

February brings us Valentine’s Day AND International Pancake Day!  Knock off two holidays at once with these delicious short stacks!

With a basic pancake recipe and our delicious Coconut Whipped Cream for a topping, these stacks come alive!

Use a paring knife to get creative and carve up some fruit!  The combinations are endless!  Have fun….

Sweetheart Short Stacks

These are fun for Valentine's Day or any day to give your kids a sweet treat.

  • 2 cups of flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 2 teaspoons of sugar
  • 1/4 teaspoon of salt
  • 2 cups of soy milk
  • 2 Tablespoons of vegetable oil
  • Fruit of your choice - I used strawberries and blackberries
  • Wooden Skewers - cut into 4-5' pieces
  • Condiments - syrup or coconut whipped cream


  • Heat up your grill or non-stick frying pan
  • Mix all the dry ingredients together
  • add the soy milk and veggie oil and mix just until combined. Don't overmix!
  • When water bounces on your pan, its hot enough. Then pour on a couple of pancakes, and cook until the middle begins forming bubbles. Flip your cakes and cook the other side until golden.
  • Slice some your fruit, and use a paring knife to carve some strawberry hearts. Chop your pancakes into bite-sized pieces, and start stacking! You can top with the coconut whipped cream and/or syrup or agave.
  • Be creative and have fun!
